Ingredients

  • 3 bagel sliced in half lengthwise
  • 6 egg medium
  • 6 tbsp Parmesan Cheese use veggie Parmesan if preferred, grated
  • 6 lices prosciutto
  • salt freshly ground, to season
  • black pepper freshly ground, to season
  • thyme fresh; or chopped chives; to garnish
  • butter as needed, softened
  • truffle pesto optional, or drizzling of truffle oil; to serve

Instructions

  1. Preheat the oven to 200C (400F) and line a sheet-pan with baking paper.
  2. Use a cookie cutter to enlarge the bagel holes slightly.
  3. Butter both sides of the bagels and spread a little butter over the baking paper to grease.
  4. Place the bagels on the greased baking paper, pressing to form a seal.
  5. Carefully crack the eggs in the holes, making sure the yolks remain intact.
  6. Sprinkle the bagels with grated cheese and season with salt and pepper.
  7. Place a slice of prosciutto on each of the bagels.
  8. Bake for 12-15 minutes, depending on how you like your eggs cooked.
  9. Sprinkle with the thyme and add little truffle pesto or very light drizzling of truffle oil before serving, if desired.

Notes

  • Make as many or as few eggs as you need. Omit the prosciutto for a vegetarian version.
