Sheet Pan Basil Balsamic Chicken and Peppers

This Sheet Pan Basil Balsamic Chicken and Peppers Recipe is the perfect recipe for a quick weeknight dinner. It's made with just a few simple ingredients, bakes on one large baking sheet and can be served in a variety of ways! Enjoy this balsamic chicken recipe in a wrap, salad or whole grain rice bowl!

Ingredients

  • 1 lb. boneless chicken breast cut into 1-inch pieces
  • 3 multicolor bell peppers cut into 1-inch pieces
  • 1 medium red onion cut into 1-inch pieces
  • 1/4 cup balsamic vinegar (60g)
  • 2 Tbsp honey (42g)
  • 1 Tbsp Dijon mustard
  • 3 cloves garlic minced
  • 3 Tbsp fresh basil chopped

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil (for easy clean up) or spray with cooking spray.
  2. Add the chicken, peppers and onions to the baking sheet. Season with 1/2 tsp salt and 1/4 tsp black pepper (or to taste).
  3. In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard and garlic.
  4. Drizzle half the sauce over the chicken and veggies (save the other half) and toss to combine.
  5. Bake for 18-22 minutes, tossing halfway through, or until the chicken is cooked through.
  6. When done, drizzle the remaining sauce over top and sprinkle with fresh basil.
  7. Serve with rice, cauliflower rice or enjoy as is!

Notes

  • This sheet pan meal is low in fat so I would recommend serving with something that has some fat in it to make this meal more filling. Would be delicious with some avocado or a salad with some feta or goat cheese and balsamic vinaigrette!
