																							Ingredients
- 1 ½ pounds boneless skinless chicken breasts, about 3 large breasts
 - 2 tablespoons dried oregano
 - 2 tablespoons paprika
 - 1 tablespoon minced garlic
 - 1 teaspoon lime juice
 - ¼ cup olive oil
 - Salt, to taste
 - ground black pepper, to taste
 - 2 cups peeled and sliced sweet potatoes, about 2 medium sweet potatoes
 - 1 bunch trimmed and chopped asparagus
 - 1 cup broccoli florets
 - 2 large peeled and cut lengthwise carrots
 - 2 cups trimmed and cut in half green beans
 - 1 cup cleaned and halved mushrooms
 
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
 - Whisk together 2 tablespoons dried oregano, 2 tablespoons paprika, 1 tablespoon minced garlic, 1 teaspoon lime juice, ¼ cup olive oil, salt, and ground black pepper,.
 - Spread 2 cups peeled and sliced sweet potatoes, 1 bunch trimmed and chopped asparagus, 1 cup broccoli florets, 2 large peeled and cut lengthwise carrots, 2 cups trimmed and cut in half green beans, and 1 cup cleaned and halved mushrooms onto a large baking sheet.
 - Pour half of the sauce mixture over the vegetables, toss them together, and spread them out on the baking sheet.
 - Place 1 ½ pounds boneless skinless chicken breasts, on top of the vegetables and brush the remaining sauce on both sides of the chicken.
 - Bake 25-30 minutes until the chicken is cooked through and reaches 165 degrees Fahrenheit on a thermometer. Broil for 3-4 minutes to caramelize the tops of the chicken vegetables. Serve immediately.
