Sheet Pan Salmon with Olives and Tomatoes

This easy sheet pan salmon recipe is made with olives, tomatoes, onions and fresh oregano. The ultimate healthy seafood dinner recipe!

Ingredients

  • 20 ounce salmon wild, filet
  • 32 ounces whole peeled tomatoes (drained)
  • 1 medium red onion (thinly sliced)
  • 12 kalamata olives
  • 1 lemon (thinly sliced)
  • 1 tablespoon oregano optional, fresh
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 400 degrees and spray a large baking sheet with cooking spray or line with foil. 
  2. Scatter the baking sheet with the onions, tomatoes and olives then top with the salmon filet. Place lemon slices on top of the salmon in a single layer. Drizzle with olive oil, salt, pepper and oregano then lightly toss the veggies to coat.
  3. Bake until fish flakes easily with a fork, 16-18 minutes.
