Ingredients

  • 1 pound frozen pierogies potato and cheese or your choice
  • 4 sausage links Italian, kielbasa, or smoked sausage, sliced into rounds
  • 1 medium red bell pepper sliced
  • 1 medium yellow bell pepper sliced
  • 1 medium red onion sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • salt and pepper to taste
  • fresh parsley chopped (for garnish)
  • sour cream for serving, optional

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine the frozen perogies, sliced sausages, bell peppers, and red onion. Drizzle with the olive oil, then sprinkle with smoked paprika, garlic powder, dried oregano, salt, and pepper. Toss everything together until evenly coated.
  3. Spread the perogies, sausages, and vegetables in an even layer on the prepared baking sheet. Make sure everything is spaced out to ensure even roasting.
  4. Place the baking sheet in the preheated oven and bake for 25-30 minutes, flipping the perogies and stirring the vegetables halfway through, until the perogies are golden and the sausages are fully cooked.
  5. Remove from the oven and garnish with freshly chopped parsley. Serve hot with a side of sour cream for dipping, if desired.

Notes

  • Switch Up the Sausage: Try different types of sausage, like spicy chorizo or herby Italian sausage.
  • Add Extra Veggies: Try adding mushrooms, zucchini, or even cherry tomatoes for more variety and color.
