Ingredients

  • 1 pound kielbasa sausage sliced into 1/2-inch pieces
  • 1 1/2 pounds red baby potatoes or baby yellow potatoes, cut into bite-sized pieces
  • 1 onion sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • salt and pepper to taste
  • fresh parsley chopped, for garnish

  1. Preheat the oven to 400° Fahrenheit.  
  2. On a large sheet pan, spread out the sliced kielbasa sausage, potatoes, and onion.
  3. Drizzle the olive oil over the sausage and vegetables. Sprinkle them with garlic powder, smoked paprika, dried thyme, salt, and pepper. Toss everything together to ensure even coating.
  4. Spread the ingredients in a single layer on the sheet pan, ensuring they are not overcrowded for even roasting.
  5. Roast in the preheated oven for 25 minutes, or until the potatoes are tender and the sausage is slightly browned. Halfway through the cooking time, stir the ingredients to ensure even cooking.
  6. Remove from the oven and sprinkle with chopped fresh parsley for garnish.

Notes

  • Cut the potatoes into uniform sizes for even cooking.
  • Ensure all ingredients are well coated with olive oil to prevent sticking and to achieve a nice roast. However, avoid using too much oil as it can make the dish greasy.
  • Spread the sausage and potatoes in a single layer on the sheet pan. Avoid overcrowding to ensure they roast properly and get a nice caramelization.
  • Cooking times may vary depending on your oven and the size of the potato pieces. Check for doneness at the 20-minute mark and adjust cooking time as needed.
  • Stirring the ingredients halfway through the cooking process helps in even roasting and prevents burning.
