Ingredients
- 1 pound kielbasa sausage sliced into 1/2-inch pieces
- 1 1/2 pounds red baby potatoes or baby yellow potatoes, cut into bite-sized pieces
- 1 onion sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- salt and pepper to taste
- fresh parsley chopped, for garnish
Instructions
- Preheat the oven to 400° Fahrenheit.
- On a large sheet pan, spread out the sliced kielbasa sausage, potatoes, and onion.
- Drizzle the olive oil over the sausage and vegetables. Sprinkle them with garlic powder, smoked paprika, dried thyme, salt, and pepper. Toss everything together to ensure even coating.
- Spread the ingredients in a single layer on the sheet pan, ensuring they are not overcrowded for even roasting.
- Roast in the preheated oven for 25 minutes, or until the potatoes are tender and the sausage is slightly browned. Halfway through the cooking time, stir the ingredients to ensure even cooking.
- Remove from the oven and sprinkle with chopped fresh parsley for garnish.

- Cut the potatoes into uniform sizes for even cooking.
