Ingredients
- 1 pound smoked sausage , cut into 1/2" slices
- 4 medium red potatoes , cut into 1" cubes
- 1/2 yellow onion , chopped
- 4 tablespoons vegetable oil , divided
- 1 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 16 ounces Sauerkraut , rinsed and well drained
Instructions
- Preheat oven to 375 degrees.
- Toss the smoked sausage, potatoes, onion, 2 tablespoons vegetable oil, salt, and pepper together in a bowl.
- Spread onto a baking sheet.
- Make small wells of space in 8 different parts of the baking sheet.
- Mix sauerkraut and remaining 2 tablespoons of oil.
- Place small handfuls of sauerkraut into the wells on the baking sheet.
- Bake for 35-40 minutes or until potatoes and sausage are browned and cooked through.
