Ingredients
- 1 pound smoked sausage , cut into 1/2 inch slices
- 4 medium potato cut into 1 inch cubes, red
- 1/2 yellow onion , chopped
- 1 red bell pepper , cut into 1 inch cubes
- 1 zucchini , cut into 1/2 inch thick slices
- 4 tablespoons vegetable oil
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper coarse ground
Instructions
- Preheat oven to 375 degrees.
- Toss the smoked sausage, potatoes, onion, red bell pepper, zucchini, vegetable oil, Italian seasoning, salt, and pepper together in a bowl.
- Spread onto a baking sheet.
- Bake for 35-40 minutes or until potatoes and sausage are browned and cooked through.
