Sheet Pan Sausage & Peppers

This easy oven-baked Sheet Pan Sausage and Pepper dinner will have dinner in the oven within 15 minutes.

Ingredients

  • 4 links bratwurst
  • 1 pound mini potato medley or new potatoes
  • 1 red bell pepper cored, seeded, and sliced
  • 1 yellow bell pepper cored, seeded, and sliced
  • 1/2 red cabbage trimmed and sliced
  • 1/2 red onion peeled and sliced
  • 6 cloves garlic peeled and crushed
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 4 ervings brown rice or whole-grain wild rice, for serving
  • 4 fried eggs (optional)

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper (for easy clean up).
  2. Arrange the sausages on the baking sheet and then nestle the potatoes, veggies, onion, and garlic all around. Drizzle the olive oil on top and season with salt and pepper.
  3. Bake until the potatoes are tender when pierced with a fork and the sausage is cooked all the way through, about 35 to 40 minutes. Serve with rice and/or (optional) fried eggs over top.
