Sheet Pan Sausage & Peppers

This easy oven-baked Sheet Pan Sausage and Pepper dinner will have dinner in the oven within 15 minutes.

Ingredients
- 4 links bratwurst
- 1 pound mini potato medley or new potatoes
- 1 red bell pepper cored, seeded, and sliced
- 1 yellow bell pepper cored, seeded, and sliced
- 1/2 red cabbage trimmed and sliced
- 1/2 red onion peeled and sliced
- 6 cloves garlic peeled and crushed
- 2 tablespoons olive oil
- salt and pepper to taste
- 4 ervings brown rice or whole-grain wild rice, for serving
- 4 fried eggs (optional)
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper (for easy clean up).
- Arrange the sausages on the baking sheet and then nestle the potatoes, veggies, onion, and garlic all around. Drizzle the olive oil on top and season with salt and pepper.
- Bake until the potatoes are tender when pierced with a fork and the sausage is cooked all the way through, about 35 to 40 minutes. Serve with rice and/or (optional) fried eggs over top.
