Sheet Pan Turkey Dinner Recipe

Simple turkey dinner with roasted vegetables. This one pan meal cooks moist turkey tenderloins along with sweet potatoes, baby potatoes and brussels sprouts.

Ingredients

  • 1.5 pounds turkey tenderloins
  • 1.5 pound bag baby potatoes
  • 2 sweet potatoes
  • 1 large red onion
  • 12 ounces fresh Brussel sprouts trimmed
  • ¼ cup vegetable or avocado oil
  • 1 cup brown sugar or sugar alternative
  • 1 0.6 ounce packet zesty Italian dressing mix

Instructions

  1. Preheat oven to 400°F degrees.
  2. On a large rimmed cookie sheet lined with foil and place the turkey tenderloins in the middle of the cookie sheet.    
  3. Next halve or quarter the potatoes.  
  4. Peel and cube the sweet potatoes.Slice your onion.  
  5. Halve the brussels sprouts.
  6. Place all the vegetables in a large bowl.
  7. Add the oil and toss to coat.  
  8. In a small bowl mix together the brown sugar and Italian dressing mix.
  9. Add half the seasoning mix to the vegetables. Toss to combine.
  10. Scatter the vegetables all around the turkey tenderloins.
  11. Place the remaining seasoning mix on the turkey tenderloins.
  12. Place in oven and bake for 40-45 minutes.  Roast until vegetables are tender and onions caramelize. The turkey should reach at an internal temperature of 165°F degrees.

Notes

  • Use 2 tablespoons of a dry homemade Italian dressing in place of the packet.
  • For a sugar free low carb meal be sure to use golden monk fruit or erythritol in place of brown sugar.
