Shiozake Japanese salted salmon 塩鮭

Shiozake is Japanese salted salmon. It is usually served as main dish for breakfast with other side dishes such as egg rolls. Also it is popular for Obento.

Ingredients

  • 300g/10oz salmon fillets
  • 15 g salt 5% of salmon weight
  • 1 tbs sake

Instructions

  1. Pat dry the salmon fillets with kitchen paper towel.
  2. Pour and sprinkle sake over salmon fillets.
  3. Sprinkle salt on both sides of salmon fillets.
  4. Wrap the salmon fillets with kitchen paper towel and cling wrap over.
  5. Refrigerate the fillets over night or at least 7-8 hours.
  6. Grill for 7-8 minutes in the oven at 180 degrees celsius.
  7. Serve with plain steamed rice.

Notes

  • make bulk and store in freezer. It will be kept for a couple month in freezer.
  • If you don't have cooking sake, it can be substituted by Chinese wine or dry cherry.
