Shredded Brussels Sprouts Salad

This shredded brussels sprouts salad is made with apple, pear, pomegranate seeds, pepitas, dried cranberries, and a creamy tahini dressing.

Ingredients

Salad
  • 5 cups shredded brussels sprouts
  • 1 apple, diced
  • 1 pear, diced
  • 1/4 cup pomegranate seeds
  • 1/4 cup dried cranberries
  • 1 tablespoon Pepitas
  • 1 tablespoon Chopped Pecans
Tahini Maple Dressing
  • 1/4 cup Tahini
  • 2 tablespoons Dijon mustard
  • 2-3 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • salt and pepper to taste
  • 4-5 tablespoons warm water

Instructions

  1. In a glass measuring cup or jar, add all of the dressing ingredients. Whisk or shake the dressing until it's well combined. Taste for seasoning and adjust as needed. If the dressing is too thick add an extra tablespoon of water.
  2. Add all of the salad ingredients to a large serving bowl. Pour half of the dressing onto the salad and toss everything together. If needed, add more of the dressing until it's the consistency and taste that you like. Add additional salt and pepper to the salad as needed.

Notes

  • This salad is best if it's made and served the day you plan to eat it.
