Shrimp and Couscous with Peas and Mint

Ingredients

  • 1 1/3 cup chicken stock/broth or vegetable broth
  • 1 cup peas preferably fresh, but frozen can also be used
  • 1 cup couscous
  • 1/4 cup pine nuts preferably toasted
  • 2 tablespoons fresh mint chopped
  • 1 lb. Shrimp peeled and deveined
  • 2 tablespoons extra-virgin olive oil plus more for serving
  • kosher salt to taste
  • black pepper to taste
  • chopped fresh parsley for garnish (optional)

Instructions

  1. In a medium saucepan, boil the chicken broth (1 1/3 cups).
  2. Add the peas (1 cup) and salt to taste and boil for one minute.
  3. Add the couscous (1 cup), stir, turn off the heat, and cover. Let sit for 5-10 minutes.
  4. Meanwhile, pat the shrimp (1 lb.) dry with a clean kitchen or paper towel.
  5. Mix shrimp in small bowl with 2 tablespoons olive oil, and plenty of salt and pepper.
  6. Sear shrimp in a skillet on high heat for two minutes on each side.
  7. Fluff couscous with a fork and stir in fresh mint (2 tablespoon) and toasted pine nuts(1/4 cup). Taste and adjust seasoning as necessary.
  8. Serve shrimp on top of couscous.

Notes

  • You can use whole wheat or regular couscous for this recipe- I used regular.
