Shrimp and Mushroom Flatbread Pizza

Ingredients

  • 1 pound frozen pizza dough (defrosted)
  • 1 tablespoon olive oil
  • 4 ounces sliced mushrooms
  • ½ shallot (thinly sliced)
  • 1 teaspoon minced garlic 
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup extra small shrimp
  • 1/2 teaspoon ground thyme
  • 1 cup grated gruyere cheese

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Roll out pizza dough into a flatbread. Score the dough with a fork.
  3. Bake the dough for ten minutes . Remove from the oven and set to the side.
  4. In a medium pan heat oil, add in mushrooms and shallots. Cook for three minutes before adding in shrimp, salt, pepper, and thyme. Continue cooking until shrimp is pink.
  5. Spread shrimp mixture over the flatbread and top with shredded cheese. 
  6. Return flatbread to the oven to bake for 8 minutes or until cheese has melted.
  7. Cut into 8 slices and serve.
