Ingredients

  • 5 ounces jumbo raw shrimp peeled and deveined
  • 1 teaspoon olive oil
  • sea salt to taste
  • 2 cups watermelon cut into 1-inch cubes
  • 1 avocado cubed
  • 1/4 cup feta cheese crumbled
  • 1 tablespoon fresh mint thinly sliced
For the dressing:
  • 2 teaspoons honey
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon freshly squeezed lime juice plus additional for finishing the dish
  • 1/2 tablespoon Tabasco green jalapeno sauce

Instructions

  1. Preheat your grill to medium.
  2. Toss the shrimp with the oil and sprinkle with a pinch of salt.
  3. Grill until opaque and pink, about 1 to 2 minutes per side. Allow to rest for 5 minutes after grilling, then add to a large bowl.
  4. Into the bowl, add the cubed watermelon, avocado, feta cheese, and mint and toss together.
  5. In a small bowl, whisk together all the dressing ingredients and pour over the salad, mixing well.
  6. Add one more squeeze of fresh lime juice, toss well, and season to taste with salt.
