Shrimp Chips
Shrimp Chips are made by deep-frying dried shrimp chip pieces in hot vegetable oil until they quickly expand and become crisp. The chips puff up shortly after hitting the oil heated to about 338-374°F, resulting in light, crunchy snacks with a mild shrimp flavor.
Ingredients
- 2 cups vegetable oil
- 1 box shrimp chips 200g/7.05 oz, dry
Instructions
- Pour 2 cups of vegetable oil into a pan and turn on the fire to medium high.
- Let the oil heat up around 338 F-374 F. Then, turn the fire to small or low. (*If the oil is not hot enough. It will take a long time and some will not expand well.)
- Put 2-3 pieces of dried chips into hot oil for a few seconds, then it will expand. (Try not to put a lot all at once.)
- Once the chips expand, take them out quickly. If you leave the chips in the oil a little bit longer, it will burn.
- After that, put the chips in a bowl with paper towels to absorb excess oil from the chips.
Notes
- Use a thermometer to ensure the oil temperature stays between 338°F and 374°F for optimal expansion.
- Turn the heat down to low once the oil reaches about 360°F to maintain temperature without overheating.
- Fry just a few chips at a time to prevent sticking and ensure even puffing.
- Remove chips quickly after they expand to avoid burning.
- Drain fried chips on paper towels to absorb excess oil for a cleaner finish.
