Shrimp Chips

Shrimp Chips are made by deep-frying dried shrimp chip pieces in hot vegetable oil until they quickly expand and become crisp. The chips puff up shortly after hitting the oil heated to about 338-374°F, resulting in light, crunchy snacks with a mild shrimp flavor.

Description

This recipe involves heating vegetable oil to a temperature range of approximately 338 to 374 degrees Fahrenheit and then frying a few pieces of dried shrimp chips at a time. The high heat causes the chips to rapidly expand and crisp, creating the characteristic airy texture of shrimp chips. The process is quick, requiring just seconds per batch to achieve the perfect puffed shape.

The chips should be removed promptly once fully expanded to avoid burning and are then drained on paper towels to absorb excess oil. The result is an enjoyable snack with a subtle seafood taste and a satisfying crunch.

Using a thermometer helps maintain the oil temperature within the ideal range. Lower heat slows expansion and can result in uneven cooking, while too high a temperature risks burning the chips. Managing small batches avoids overcrowding and sticking.

Ingredients

Servings
  • 2 cups vegetable oil
  • 1 box shrimp chips 200g/7.05 oz, dry

Instructions

  1. Pour 2 cups of vegetable oil into a pan and turn on the fire to medium high.
  2. Let the oil heat up around 338 F-374 F. Then, turn the fire to small or low. (*If the oil is not hot enough. It will take a long time and some will not expand well.)
  3. Put 2-3 pieces of dried chips into hot oil for a few seconds, then it will expand. (Try not to put a lot all at once.)
  4. Once the chips expand, take them out quickly. If you leave the chips in the oil a little bit longer, it will burn.
  5. After that, put the chips in a bowl with paper towels to absorb excess oil from the chips.

Notes

  • Use a thermometer to ensure the oil temperature stays between 338°F and 374°F for optimal expansion.
  • Turn the heat down to low once the oil reaches about 360°F to maintain temperature without overheating.
  • Fry just a few chips at a time to prevent sticking and ensure even puffing.
  • Remove chips quickly after they expand to avoid burning.
  • Drain fried chips on paper towels to absorb excess oil for a cleaner finish.
