Ingredients
- 1 lb Shrimp deveined and tail off
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 2 medium bell peppers sliced (any color)
- 1 medium medium onion sliced
Fajita Seasoning:
- 1 teaspoon EACH: chili powder, cumin, onion powder, garlic powder
- ½ teaspoon EACH: paprika, dried oregano, salt
Optional, for Serving
- Guacamole or sliced avocado

Instructions
- Whisk the fajita seasoning in a small bowl.
- To a large bowl, add the shrimp, lime juice, oil, and about ¾ of the fajita seasoning; toss or stir to combine.
- Heat a large pan over medium-high heat. Add the shrimp to the pan and cook for 1 minute on each side or until cooked through. Remove from the pan and set aside. To the same pan, add a light drizzle of oil and the bell peppers and onions and cook for about 2-3 minutes, just until they begin to soften. Sprinkle with the remaining fajita seasoning. Push the peppers to one side and return the shrimp to the pan.
- Serve with your fresh tortilla, guacamole or avocado, sour cream or salsa, grated cheese, and freshly sliced lime.
