Shrimp Fajitas Sheet Pan

Shrimp Fajitas Sheet Pan features thinly sliced bell peppers and onion tossed with shrimp and seasoned with a classic fajita spice mix. Roasting everything together on one pan at a high temperature cooks the shrimp quickly and chars the vegetables slightly. Ingredients

  • 1 pound Shrimp peeled and deveined, medium
  • 1 red bell pepper sliced thin
  • 1 yellow bell pepper sliced thin
  • 1 onion sliced thin, small
  • 6 tortillas warmed
  • 3 lime
  • cilantro avocado or guacamole, salsa, sour cream or plain Greek yogurt, shredded Mexican cheese, lettuce, optional topping
Fajita seasoning:
  • 1 ½ teaspoon chili powder
  • ¾ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • 1 teaspoon table salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper optional

Instructions

  1. Preheat oven to 400 degrees F.
  2. Spray a baking sheet pan with cooking spray or drizzle a little olive oil and spread all over evenly.
  3. In a medium bowl, add the peppers, onions and shrimp.
  4. In a small bowl, mix together the fajita seasonings.
  5. Sprinkle the entire seasoning mixture to peppers, onions and shrimp.
  6. Toss well to mix.
  7. Place the seasoned shrimp, peppers and onions to the greased baking sheet.
  8. Place in the oven and cook for 9 minutes or until shrimp is cooked
  9. Remove from the oven and squeeze lime juice over the entire pan.
  10. Serve your shrimp fajitas in a warm tortillas
  11. Garnish with optional toppings: cilantro, avocado or guacamole, salsa, sour cream or plain Greek yogurt, shredded Mexican cheese, lettuce, and/or lime juice.

Notes

  • Thinly slice peppers and onions to reduce cooking time and ensure even roasting with shrimp.
  • Season fajita spices directly on the pan ingredients to streamline preparation.
  • Warm tortillas by wrapping in foil in the oven during the last few minutes of cooking or microwave covered with a damp towel for one minute.
  • Customize toppings such as avocado, salsa, sour cream, cheese, and cilantro to your preference.
