Shrimp Fajitas Sheet Pan

Shrimp Fajitas Sheet Pan features thinly sliced bell peppers and onion tossed with shrimp and seasoned with a classic fajita spice mix. Roasting everything together on one pan at a high temperature cooks the shrimp quickly and chars the vegetables slightly. Served in warm tortillas with optional toppings, this recipe simplifies fajita preparation while retaining robust flavors.

Description

This Shrimp Fajitas Sheet Pan recipe combines medium-sized peeled and deveined shrimp with sliced red and yellow bell peppers and onion. The mixture is coated evenly with a fajita seasoning blend containing chili powder, cumin, garlic powder, and optional cayenne for heat. Cooking on a preheated sheet pan at 400°F for about nine minutes results in shrimp that is cooked through and vegetables that are tender-crisp with flavorful charring.

The cooked shrimp and vegetables are served in warmed tortillas and can be topped with traditional additions like cilantro, sliced avocado or guacamole, salsa, sour cream, shredded Mexican cheese, or lettuce. Lime juice is squeezed over the dish at the end, adding brightness and acidity.

For best results, slice vegetables thinly to ensure even and quick cooking, and warm tortillas just before serving either by wrapping in foil in the oven or microwaving covered by a damp paper towel. This sheet pan approach streamlines fajita making with minimal cleanup while maintaining the characteristic flavors and textures.
