Shrimp Orzo Salad

Ingredients

  • 8 ounces orzo pasta
  • 1 pound Shrimp peeled and deveined
  • 1 cup cherry tomatoes halved
  • 1 English cucumber diced
  • ½ cup feta cheese crumbled
  • ¼ cup fresh dill chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

  1. Cook orzo in boiling salted water until al dente, about 8-10 minutes. Drain and rinse under cold water. Set aside.
  2. In a skillet over medium heat, cook the shrimp with a bit of olive oil and a pinch of salt and pepper until pink and opaque, about 2-3 minutes per side.
  3. In a large bowl, combine cooked orzo, cooked shrimp, cherry tomatoes, cucumber, feta cheese, dill, and parsley.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad mixture and toss to combine.
