Ingredients

  • 10 oz (280g) tortellini
  • 1 tablespoon olive oil
  • 2 tablespoons sun-dried tomatoes oil
  • 4 oz (125g) Shrimp shelled but tail-on
  • 1/4 cup sun-dried tomatoes sliced
  • 2 cloves garlic minced
  • 1/2 cup whipping cream
  • 1/2 cup chicken broth
  • 1/4 teaspoon paprika
  • 1 pinch salt
  • 1 pinch sugar
  • 3 dashes ground black pepper
  • Chopped Parsley Leaves

Instructions

  1. Boil the tortellini according to the package instructions. Drain and set aside.
  2. Heat a skillet over medium heat with the olive oil and sun-dried tomato oil. Add the garlic and sauté for a minute before adding the shrimp. Sauté the shrimp until they are almost cooked, then add the whipping cream, chicken broth, paprika, salt, sugar, and black pepper.
  3. Bring the sauce to a simmer before adding the tortellini. Stir to combine well, then add the parsley. Serve immediately.
