Shrimp Tempura

Shrimp Tempura consists of deveined shrimp coated in a light batter made from flour, cornstarch, and cold club soda, then deep-fried until crisp without browning. The optional addition of fresh herbs in the batter and a sprinkle of sesame seeds provides subtle flavor accents. The shrimp maintain a tender interior beneath the delicate and crispy coating, making them suitable as a stand-alone appetizer or an ingredient in dishes like tempura shrimp rolls.

Ingredients

  • 1 1/2 pounds Shrimp deveined
  • 1 2/3 cups all-purpose flour
  • 1 1/2 cups cornstarch
  • 2 cups club soda or super cold water
  • 1/4 cup sesame seeds optional
  • 1/4 cup fresh herbs optional (parsley, chives, thyme are suggested)
  • cooking oil for frying

Instructions

  1. Peel and devein shrimp.
  2. Heat oil to 375 degrees f in a deep fryer or pour enough oil into a large pot to deep fry. You may want to check the oil temperature with a candy thermometer.
  3. Mix together flour, cornstarch, and club soda in a bowl. Whisk the mixture until just blended, mix only until there are no lumps in the batter. If desired add some of the fresh herbs to the batter.
  4. Dip shrimp one at a time into batter. There is no need to dip the tails. Shake off excess batter. Deep fry for about 2 to 3 minutes, the batter should crisp up, do not let the batter brown, the shrimp will overcook. Remove the cooked shrimp with a large slotted spoon.
  5. Drain shrimp on a wire rack on top of a baking sheet. You can keep the shrimp in a warm oven (200 degrees) before serving if desired.
  6. Sprinkle sesame seeds and herbs on top if desired.

Notes

  • Peanut oil is preferred for frying, but regular vegetable oil is a suitable substitute.
  • Chilling club soda or water before mixing the batter helps achieve a lighter, crisper coating.
  • Shrimp tempura can be enjoyed on its own, or incorporated into sushi rolls like tempura shrimp rolls.
