Description
Shrimp Tempura features peeled and deveined shrimp immersed in a batter combining all-purpose flour, cornstarch, and super cold club soda to create a thin, crisp coating once fried. The batter is mixed only until lumps disappear to preserve lightness. Fresh herbs can be folded into the batter for added aroma, and sesame seeds may be sprinkled on the finished tempura for texture contrast. Fry the shrimp at 375°F for 2 to 3 minutes to ensure the batter crisps quickly without coloring, keeping the shrimp moist. Draining on a wire rack prevents sogginess. This technique delivers a crunchy exterior that contrasts the juicy shrimp inside.
This tempura can be served alongside dipping sauces, as a topping for salads or rice dishes, or used within sushi rolls. The neutral batter lets the shrimp's flavor shine while adding textural interest.
For achieving the best fry, using peanut oil or vegetable oil heated to the correct temperature is recommended. Keeping the cooked shrimp warm in a 200°F oven prevents cooling before serving. The recipe allows for optional ingredients to vary flavor subtly.
Ingredients
- 1 1/2 pounds Shrimp deveined
- 1 2/3 cups all-purpose flour
- 1 1/2 cups cornstarch
- 2 cups club soda or super cold water
- 1/4 cup sesame seeds optional
- 1/4 cup fresh herbs optional (parsley, chives, thyme are suggested)
- cooking oil for frying
Instructions
- Peel and devein shrimp.
- Heat oil to 375 degrees f in a deep fryer or pour enough oil into a large pot to deep fry. You may want to check the oil temperature with a candy thermometer.
- Mix together flour, cornstarch, and club soda in a bowl. Whisk the mixture until just blended, mix only until there are no lumps in the batter. If desired add some of the fresh herbs to the batter.
- Dip shrimp one at a time into batter. There is no need to dip the tails. Shake off excess batter. Deep fry for about 2 to 3 minutes, the batter should crisp up, do not let the batter brown, the shrimp will overcook. Remove the cooked shrimp with a large slotted spoon.
- Drain shrimp on a wire rack on top of a baking sheet. You can keep the shrimp in a warm oven (200 degrees) before serving if desired.
- Sprinkle sesame seeds and herbs on top if desired.
Notes
- Peanut oil is preferred for frying, but regular vegetable oil is a suitable substitute.
- Chilling club soda or water before mixing the batter helps achieve a lighter, crisper coating.
- Shrimp tempura can be enjoyed on its own, or incorporated into sushi rolls like tempura shrimp rolls.
