Silken Tofu Breakfast Pudding
Silken Tofu Breakfast Pudding blends silken tofu, frozen blueberries, chia seeds, lemon juice, sweetener, and raw spinach into a smooth, creamy pudding. Chilling it firms the texture slightly, while optional toppings can add crunch or extra flavor. The result is a nutrient-rich, textured pudding suited to a light breakfast or snack.
Ingredients
- 1 pound silken tofu drained
- 1 ½ tablespoons chia seeds
- 1 ½ cups frozen blueberries or mixed berries
- 2 teaspoons lemon juice or 1 teaspoon apple cider vinegar
- 1 to 2 tablespoons maple syrup or agave; sub stevia or monk fruit and adjust amount as needed
- 1 large spinach or other raw green
Instructions
- Combine all ingredients in a blender and blend until smooth. Pour into two serving dishes and refrigerate for thirty minutes. Can be eaten immediately but will be slightly less set.
- Top with berries, coconut, nuts, seeds, and/or nut butter, and enjoy!
Notes
- Best consumed the same day due to raw, blended ingredients.
- Nutrition information excludes toppings and assumes use of non-caloric sweetener.
