  • 1 ½ tablespoons chia seeds
  • 1 ½ cups frozen blueberries or mixed berries
  • 2 teaspoons lemon juice or 1 teaspoon apple cider vinegar
  • 1 to 2 tablespoons maple syrup or agave; sub stevia or monk fruit and adjust amount as needed
  • 1 large spinach or other raw green

Instructions

  1. Combine all ingredients in a blender and blend until smooth. Pour into two serving dishes and refrigerate for thirty minutes. Can be eaten immediately but will be slightly less set.
  2. Top with berries, coconut, nuts, seeds, and/or nut butter, and enjoy!
