Ingredients
- 1 pound silken tofu drained
- 1 ½ tablespoons chia seeds
- 1 ½ cups frozen blueberries or mixed berries
- 2 teaspoons lemon juice or 1 teaspoon apple cider vinegar
- 1 to 2 tablespoons maple syrup or agave; sub stevia or monk fruit and adjust amount as needed
- 1 large spinach or other raw green
Instructions
- Combine all ingredients in a blender and blend until smooth. Pour into two serving dishes and refrigerate for thirty minutes. Can be eaten immediately but will be slightly less set.
- Top with berries, coconut, nuts, seeds, and/or nut butter, and enjoy!
