Silken Tofu Smoothie

The Silken Tofu Smoothie combines silken tofu with a mix of non-dairy milk or water, baby spinach or kale, frozen blueberries, raspberries, and an optional banana for additional sweetness. It’s blended until creamy and smooth, enriched with carrot, walnuts or nut butter, raw cacao powder, and optional spirulina. Ingredients

  • 1 cup non-dairy milk or water, unsweetened
  • 6 ounces silken tofu
  • 2 handfuls baby spinach or kale
  • 1 heaping cup blueberries frozen
  • ½ cup raspberries frozen
  • half of a banana omit for a less sweet, more tart smoothie, frozen, optional
  • 1 small carrot peeled and chopped
  • lemon juice fresh squeeze, optional
  • 1 palmful walnut or 1 tablespoon nut butter; or sub hemp seeds, raw, or pecans
  • 1 tablespoon raw cacao powder
  • 1 teaspoon spirulina powder optional

  1. Tip: if you're not sure whether you enjoy the taste of certain ingredients, such as raw greens and spirulina, add these in small amounts and taste as you go.
  2. Combine all ingredients in a blender. Start on low and gradually increase to high speed. Blend until smooth and creamy.
  3. Taste and adjust the flavor and consistency as desired. Add more banana for sweetness and for a thicker smoothie. Add a pinch of salt to reduce bitterness.
  4. Smoothies are best enjoyed immediately, though leftovers will keep for up to 1 day. Store in an airtight jar or container, and keep refrigerated.

Notes

  • Consume immediately for best flavor and nutrition; leftovers can be kept in the refrigerator up to 24 hours in an airtight container.
  • Freeze portions in airtight containers for up to three months; thaw in the fridge overnight and remix before serving to restore creaminess.
