Silken Tofu Smoothie
Description
This smoothie uses silken tofu as a base for creaminess and protein, paired with leafy greens like baby spinach or kale for freshness and nutrition. The addition of frozen blueberries and raspberries provides a tart sweetness and vibrant color, while banana can be added to soften the tartness and thicken the texture. Carrot adds a subtle sweetness and mild earthiness.
The recipe incorporates walnuts or nut butter for healthy fats and texture, along with raw cacao powder for a hint of chocolate flavor. Spirulina powder is optional for those looking to add a concentrated nutrient boost. Blending all ingredients from low to high speed yields a smooth and creamy beverage with a balanced flavor profile.
The smoothie is best enjoyed immediately to preserve freshness and texture but can be refrigerated up to 24 hours or frozen for up to three months, with appropriate thawing and remixing.
Ingredients
- 1 cup non-dairy milk or water, unsweetened
- 6 ounces silken tofu
- 2 handfuls baby spinach or kale
- 1 heaping cup blueberries frozen
- ½ cup raspberries frozen
- half of a banana omit for a less sweet, more tart smoothie, frozen, optional
- 1 small carrot peeled and chopped
- lemon juice fresh squeeze, optional
- 1 palmful walnut or 1 tablespoon nut butter; or sub hemp seeds, raw, or pecans
- 1 tablespoon raw cacao powder
- 1 teaspoon spirulina powder optional
Instructions
- Tip: if you're not sure whether you enjoy the taste of certain ingredients, such as raw greens and spirulina, add these in small amounts and taste as you go.
- Combine all ingredients in a blender. Start on low and gradually increase to high speed. Blend until smooth and creamy.
- Taste and adjust the flavor and consistency as desired. Add more banana for sweetness and for a thicker smoothie. Add a pinch of salt to reduce bitterness.
- Smoothies are best enjoyed immediately, though leftovers will keep for up to 1 day. Store in an airtight jar or container, and keep refrigerated.
Notes
- Consume immediately for best flavor and nutrition; leftovers can be kept in the refrigerator up to 24 hours in an airtight container.
- Freeze portions in airtight containers for up to three months; thaw in the fridge overnight and remix before serving to restore creaminess.
