Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups low-fat milk
  • 2 large eggs
  • 2 1/2 tablespoons unsalted butter melted
  • 3/4 teaspoon pure vanilla extract
  • Cooking spray or additional butter for greasing
  • Preferred toppings such as fresh fruit, maple syrup, or powdered sugar

  1. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  2. In another bowl, thoroughly whisk the low-fat milk, large eggs, melted unsalted butter, and pure vanilla extract until the mixture is smooth.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; it's okay if the batter is slightly lumpy. Avoid overmixing to keep the pancakes tender.
  4. Heat a non-stick skillet over medium heat. Lightly grease with cooking spray or butter. Pour 1 tablespoon of batter for each pancake. Cook until bubbles form and edges set, about 1-2 minutes. Flip and cook until golden brown, about 1 minute.
  5. Transfer cooked pancakes to a plate. Repeat with the remaining batter, greasing the skillet as needed. Serve warm with your favorite toppings like fresh fruit, a drizzle of maple syrup, or a sprinkle of powdered sugar.
