Simple Airfryer Turkey Dinner

Ingredients

Sweet Potato Kale Salad
  • 2 sweet potatoes diced
  • 1 tbsp olive oil
  • 1 tbsp garlic powder
  • salt & pepper
  • 8-12 oz kale
  • 1/2 cup cashews
  • 1/2 cup cranberries
  • 1 cup lemon garlic salad dressing 3/4 cup olive oil, 1/4 cup lemon, 2 tbsp minced garlic, lemon zest
Airfryer Turkey
  • 1 kg turkey breast bone in, skin on
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp garlic minced
  • 2 tbsp salt & pepper
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • 1 tbsp rosemary
  • 2 tsp mustard powder
  • 1 pinch paprika

Instructions

  1. Started off by cutting up 2 sweet potatoes into little cubes for the salad.Give them a light coating of olive oil, garlic powder, salt and pepper. Place into the Philips XXL Airfryer at 350F for 15-20 minutes.
  2. While the sweet potato cooks, mix your olive oil, lemon juice, and seasoning together and brush onto the turkey breast. 
  3. Once the sweet potatoes are done, clear out the basket and place the turkey breast in the airfryer basket skin side down. Airfry the turkey breast for 30 minutes on 350F before taking it out and flipping it over (skin side up) and keep it inside for another 20 minutes.
  4. While the turkey is cooking, massage the kale with some olive oil for the salad and then mix together the kale, sweet potato, half a cup of cashews, and half a cup of cranberries.
  5. Using a meat thermometer, check the internal temperature of the turkey to ensure that it is cooked all the way through - 165°F (74°C).
