Simple Caprese Sandwich

A light and delicious vegetarian sandwich that pleases almost everyone!

Ingredients

  • 2 lices bread or a roll (baguette is very good-see pic at bottom)
  • 1 tomato sliced, good quality like heirloom
  • 2 oz fresh mozzarella slices, preferably mozzarella di bufala, if you can source it
  • ¼ tsp sea salt (a couple pinches)
  • ½ tsp extra virgin olive oil
  • 2 large fresh basil leaves

Instructions

  1. Arrange the tomato slices on the bottom bread slice and drizzle with a little extra virgin olive oil. Sprinkle with salt. 
  2. Next, place the mozzarella slices on top of the tomatoes along with some torn pieces of basil leaves (or whole leaves) on top, and drizzle with a little more olive oil.
  3. Finally, place the other slice of bread on top and enjoy!

Notes

  • You can use a toothpick to hold the sandwich together if you're serving a crowd and want to keep them in place.
  • Remember, an authentic Caprese salad, sandwich or similar creation will never include any sort of Balsamic vinegar or glaze.
