Ingredients

  • 400 g chickpeas Canned
  • parsley Chopped
  • 3 tbsp olive oil
  • salt Pinch
  • black pepper Pinch
  • 1 tsp lemon juice
  • 1 red onion Finely diced

Instructions

  1. In a large bowl, combine the chickpeas and chopped parsley.
  2. Drizzle the extra virgin olive oil over the chickpeas.
  3. Season with a pinch of salt and a pinch of black pepper.
  4. Squeeze the juice of one lemon over the mixture.
  5. Add the finely diced red onion.
  6. Gently toss all the ingredients together until well combined.
  7. Serve immediately or refrigerate until ready to serve.
