Ingredients
- 1 tablespoon butter
- 1 pound ground lean beef/turkey*
- 1 medium onion chopped
- 1 medium green bell pepper chopped
- 2 ounce cans petite diced tomatoes drained
- 15 ounce can pinto beans rinsed & drained
- 15 ounce can kidney beans rinsed & drained
- 2 ounce cans tomato sauce
- 1/2 tablespoon ground ginger
- 1 teaspoon Mexican chili powder
- 1 teaspoon garlic powder
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon crushed red pepper optional
- toppings of your choice
Instructions
- In a Dutch oven or large saucepan, melt butter over medium heat. Add turkey or beef and cook until nearly browned, stirring frequently, approximately 5-7 minutes. Since the meat is lean, it should not require any draining.
- Add onion and bell pepper and cook until softened, stirring occasionally, about 5 minutes.
- Add remaining ingredients, stirring to combine.
- Bring to simmer for a minimum of 10 minutes.
- Ladle into bowls and top with your choice of garnishes, cheese, sour cream, raw onions or anything else you can imagine!

Notes
- *if using beef, opt for the leanest mix you can find. This recipe does not call for removing and draining of excess oil and grease. It you blend is larger than 90/10, remove beef from the pan, drain excess liquid and fats, return to pan.
