Simple Cream of Asparagus Soup Recipe

Only five simple ingredients make this healthy and low carb cream of asparagus soup that cooks in the slow cooker!

Ingredients

  • 2 pounds green asparagus washed and ends trimmed
  • 1 cup white onion chopped
  • 1 teaspoon minced garlic 
  • 5 cups vegetable or chicken broth
  • 1/2 cup heavy cream or full fat coconut milk
  • Cracked black pepper to taste

Instructions

  1. Combine the first four ingredients into your crockpot.
  2. Cook on low for 6-8 hours.
  3. When you are ready to serve the soup, take a hand blender and puree the ingredients until smooth. 
  4. Stir in the cream or coconut milk until combined. Serve with an extra dash of cream on top. Enjoy!
