- 1 teaspoon fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- kosher salt pinch
- fresh ground black pepper to taste
- 4 cups mixed greens I use baby spring mix
- 1 carrot peeled and grated
- 1/2 cucumber sliced into half moons
Instructions
- Add olive oil, lemon juice, salt and pepper into a large serving bowl. Whisk until fully blended.
- Add greens and vegetables. Toss until everything is coated in dressing, serve right away.
