Ingredients

  • 1 teaspoon fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • kosher salt pinch
  • fresh ground black pepper to taste
  • 4 cups mixed greens I use baby spring mix
  • 1 carrot peeled and grated
  • 1/2 cucumber sliced into half moons

Instructions

  1. Add olive oil, lemon juice, salt and pepper into a large serving bowl. Whisk until fully blended.
  2. Add greens and vegetables. Toss until everything is coated in dressing, serve right away.
