Simple Herbed Skillet Potatoes

Ingredients

  • 2 2 cups diced potatoes
  • 2 2 tablespoons olive oil
  • 1/4 1/4 teaspoon kosher salt
  • 1/4 1/4 teaspoon ground black pepper
  • 2 2 tablespoons fresh herbs

Instructions

  1. Preheat oven to 425 degrees
  2. Pour olive oil in the bottom of a cast iron skillet.
  3. Add in potatoes, salt, and pepper. Toss to evenly coat potatoes.
  4. Bake until roasted and fork tender, about 20-30 minutes.
  5. Remove from oven and sprinkle with fresh herbs.
  6. Variations: If using dried herbs, toss in with salt and pepper prior to baking to release the most flavor.
