Simply Indulgent Chocolate Raspberry Tart
This tart features a crisp cookie crumb crust filled with a rich chocolate ganache infused with raspberry liqueur. The silky chocolate layer combines dark chocolate, evaporated milk, and a touch of egg yolk, enriched with the bright fruitiness of raspberry liqueur. After chilling to set, the tart is decorated with fresh raspberries and chocolate accents for a visually appealing and indulgent dessert.
Ingredients
- 12 oz chocolate chips dark preferably.
- 12 oz evaporated milk
- 12 oz cookie crumbs such as graham cracker or digestive (UK & Ireland.)
- 4 tbsp raspberry liqueur
- 1 egg yolk
- 5 tbsp butter salted
Instructions
- Melt the butter and place in a mixing bowl.
- Add the cookie crumbs and mix well together.
- Pour this mixture into a 9 inch (22 cms) round pan with a removable bottom.
- Refrigerate for at least one hour.
- Put the evaporated milk, egg yolk and raspberry liqueur in a pot.
- Bring this mixture very slowly to a low boil and simmer for 2-3 minutes.
- Place the chocolate chips in a bowl. Pour the warm milk mixture over the chocolate chips and slowly stir to melt them.
- Remove the chilled crumb base from the refrigerator. Pour this chocolate mixture over the base. Smooth out and create a decoration in the chocolate ganache if desired.
- Chill in the refrigerator for at least an hour. Garnish with fresh raspberries, chocolate curls and chocolate nibs if desired.
