Single Serving Shakshuka

This Single Serving Shakshuka is the perfect meal when you're eating for one, and is ready to eat in less than 20 minutes!

Ingredients

  • 1 C marinara
  • 1 tsp kosher salt
  • 1 tsp cracked pepper
  • 2 Tbsp pesto
  • 2 eggs
  • 3 Tbsp Parmesan Cheese

Instructions

  1. Preheat oven to 350 degrees. In a small cast iron skillet, add the marinara. Sprinkle the salt and pepper over the marinara, then gently stir in the pesto.
  2. Make a slight depression in the the center of the mixture, then crack the eggs into the depression.
  3. Top with the Parmesan cheese, then bake for 13-15 minutes for over easy eggs.
