Sirene po Shopski

Sirene po shopski is a Bulgarian dish made from tomatoes and sirene cheese cooked in small earthenware pots with lids (gyuveche).

Ingredients

  • 1 large tomato , finely diced
  • 1 green bull’s horn pepper , grilled, peeled and diced
  • ½ onion , sliced
  • ½ teaspoon sugar
  • 5 oz. sirene , Bulgarian cheese
  • 1 large egg
  • 2 tablespoons olive oil
  • 3 tablespoons chopped parsley
  • ½ teaspoon oregano , optional
  • ¼ teaspoon red chili powder , optional
  • salt
  • pepper

  • Gyuveche , small earthen pot with lid

Instructions

  1. Pour the oil into the bottom of a gyuveche or small individual terracotta pot with a lid (suitable for cooking).
  2. Heat the oil and sauté the onion over medium heat for 2 minutes, stirring regularly.
  3. Add the bull’s horn pepper and sauté again for 3 minutes over medium heat, stirring regularly.
  4. Add the tomato and sugar and stir well. Cook for 2 minutes, stirring regularly.
  5. Add half the sirene (cheese) and half the parsley.
  6. Place the lid on the pot and cook over low heat for 15 minutes.
  7. Meanwhile, preheat the oven to 390 F (200˚C).
  8. After 15 minutes of cooking, lightly season with salt and pepper and add the oregano and red pepper powder. Mix.
  9. Add the other half of the sirene.
  10. Add the egg and place the gyuveche in the oven, uncovered, for 5 to 10 minutes or until the egg reaches the desired consistency.
  11. Leave to cool for 3 to 4 minutes before serving.
