Ingredients

  • 6 lices Bacon , chopped
  • 1/2 yellow onion , chopped
  • 1 cup yellow cornmeal
  • 1 cup whole milk
  • 1 cup flour
  • 2/3 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 large egg
  • 1/3 cup unsalted butter , melted
  • 2 tablespoons unsalted butter , melted (for brushing on pan)

Instructions

  1. Preheat oven to 400 degrees.
  2. To an 8 or 9 inch cast iron skillet pan on medium-high heat add the chopped bacon and cook until chewy but slightly crispy.
  3. Lower heat to medium, remove bacon and add in the onions, cooking for 5-6 minutes until translucent.
  4. In a large mixing bowl add the cornmeal and milk, stir well and let soak for 10 minutes.
  5. To the cornmeal milk mixture, add in the flour, sugar, salt, baking powder, egg, 1/3 cup melted unsalted butter, and cooked onions, and whisk well.
  6. Reheat the pan on the stovetop and brush with melted butter until sizzling.
  7. Pour the cornbread mixture into a hot pan and spread evenly.
  8. Top with bacon pieces.
  9. Bake for 20-25 minutes or until golden brown.
