Ingredients

  • 2 tablespoons olive oil
  • 2 large sliced onions
  • 4 boneless skinless chicken breasts
  • salt and pepper to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup shredded Swiss cheese
  • 8 slices Provolone cheese

Instructions

  1. Add 2 tablespoons olive oil and sliced 2 large sliced onions to a large skillet over medium-high heat. Sauté until caramelized to a deep golden brown, about 7-10 minutes. Remove onions and set aside on a plate.
  2. Add 4 boneless skinless chicken breasts and cook on each side for 3-4 minutes or until cooked throughout and no longer pink. Set aside with the onions.
  3. Melt 2 tablespoons unsalted butter in the skillet. Add 2 tablespoons all-purpose flour and stir until combined. Add 2 cups beef broth, 1 teaspoon dried oregano, 1 teaspoon dried thyme, and salt and pepper to taste. Simmer for 1-2 minutes until it starts to thicken.
  4. Reduce the heat to a simmer, and add the chicken and onion gravy back to the skillet. Top with 1 cup shredded Swiss cheese and 8 slices provolone cheese.
  5. Place the skillet in the oven and broil for 1-2 minutes or until cheese is melted.
