Skillet Gnocchi with Bacon, Tomatoes, and Spinach

Ingredients

  • 2 pieces of bacon, cut into small pieces
  • 1 tbsp butter, divided
  • ¼ small yellow onion, sliced
  • 1 (12 oz) bag of skillet gnocchi
  • 1 Handful of grape tomatoes
  • 1½ cups baby spinach
  • 2 cloves of garlic, minced
  • pinch of crushed red pepper flakes
  • Sea salt and freshly cracked pepper, to taste
  • Fresh parmesan, grated

Instructions

  1. Cook the bacon bits in a cast iron skillet over medium heat until golden brown; remove from the skillet and place on a paper towel to drain the grease. Discard the bacon grease from the skillet.
  2. Melt half of the butter in the same skillet over medium-high heat. Add the onion and cook, stirring often, for 3-4 minutes.
  3. Add the remaining butter, skillet gnocchi and tomatoes then cook, stirring occasionally for 4 minutes. 
  4. Add the baby spinach, minced garlic and crushed red pepper flakes. Cook, stirring constantly, for 1-2 minutes or until the spinach is wilted.
  5. Season with sea salt and freshly cracked pepper, to taste. Serve immediately with fresh parmesan on the side. Enjoy.
