Skillet Mexican Corn Dip
Skillet Mexican Corn Dip with cream cheese is an easy party appetizer full of zesty Tex-Mex flavor, sweet corn, and a buffalo sauce kick. Serve this spicy chip dip at get-togethers and football parties, it's always a hit!

- ½ cup sour cream
- 1 ½ cream cheese block
- 2-3 tbsp buffalo sauce
- lime juice juice of one lime
- 1 tbsp cumin
- 1 cup pepper jack cheese shredded
- 2 cups whole kernel corn frozen or canned
- ⅓ cup cilantro chopped
Topping Ingredients:
- ⅓ cup pepper jack cheese
- ⅓ cup feta cheese crumbled
- 1 tsp tajin seasoning
- cilantro extra feta, and limes for garnish, fresh, chopped

- In a large bowl, beat together sour cream, cream cheese, buffalo sauce, and lime juice with an electric mixer.
- Fold in cheese, corn, cilantro, and cumin.
- Grease an 8-10 inch cast iron or enameled skillet with butter, and spread your corn mixture into it evenly.
- Top with a layer of pepper jack, feta, and Tajin, then bake at 350 degrees for 20 minutes, or until top is bubbly and starts to turn golden brown.
- Remove from oven, sprinkle with cilantro, feta, and sliced limes. Serve warm with tortilla chips.
