Skillet Tilapia with Tomatoes

Quick, easy and full of healthy veggies this Skillet Tilapia with Tomatoes is a win for a busy night. It comes together in less than 30 minutes and only requires a few ingredients. {gluten free, paleo, whole 30}

Ingredients

  • 3 pieces tilapia or other mild white fish
  • 2 ½ tablespoon olive oil
  • 2 cups grape tomato or cherry tomato
  • salt
  • black pepper
  • parsley or basil, for garnish

Instructions

    Cup of Yum
  1. Heat a skillet over medium-high heat and add 1 tablespoon olive oil.
  2. Sprinkle fish with salt and pepper.
  3. Add to pan and saute for about 3 minutes per side or until fish is cooked through.
  4. Remove to a plate and cover with foil.
  5. Add 1 ½ tablespoon olive oil to pan and tomatoes. Salt and pepper to taste.
  6. Cook for about 4 minutes or until they get some browning and start to blister, tossing occasionally.
  7. Add fish back to the same pan and warm for a minute.
  8. Serve immediately.
