Skinny Buttermilk Pancakes

Ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 2 Tbsp sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 egg whites
  • 1 egg
  • 2 cups buttermilk
  • 2 Tbsp. canola oil
  • fresh mixed berries optional

Instructions

  1. In a large bowl combine flours, sugar, baking powder, baking soda, and set aside.
  2. In another bowl, whisk together egg whites, egg, buttermilk, and oil. Stir in dry ingredients until just moistened.
  3. Spray a hot griddle with cooking spray. Turn when bubbles start to form on top. Cook until second side is brown. Serve with berries if desired.

Notes

  • Freeze cooled pancakes between sheets of wax paper in a resealable plastic freezer bag. To use, place pancakes on an ungreased baking sheet, cover with foil and reheat in a preheated 375 oven for 6-10 minutes. Or place a stack of three on a microwave safe plate and microwave on high for 1 to 1 1/2 minutes.
