Ingredients

  • 1- pint multi-colored grape tomatoes halved
  • 1 English cucumber diced
  • 5-8 mini peppers chopped
  • 1 can black beans rinsed
  • ½ cup cilantro parsley or basil chopped
  • 1 lime juiced
  • salt and pepper to taste

Instructions

  1. Gently toss all ingredients in a large bowl and add the juice of one lime. Add salt and pepper and more lime juice to taste.
