Ingredients
For Graham Cracker Crust
- 1 ½ cups Graham cracker crumbs
- 5 TBS butter melted
- 1 teaspoon lime zest
- 2 TBS of sugar
For Key Lime Cream Cheese Filling
- 2 ounces cream cheese softened (could also use neufatchel cheese to lighten up more)
- 1 TBS lime zest
- 1 egg yolk
- ½ cup key lime juice or lime
- ⅛ teaspoon salt
- 14 ounce can low fat sweetened condensed milk
Notes
- This recipe yielded 12 mini pies for me, however depending on how much graham cracker mixture you put into the tins, you could make more or less. I did have a bit of extra filling, so if you go ahead and use 2 cups of graham cracker crumbs, you could probably yield 15 mini pies!
