Skor Oatmeal Banana Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup palm sugar or brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup skor bits
  • 3 tablespoons hemp hearts
  • 1 tablespoon flax
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup vegetable oil or melted butter
  • 1/2 teaspoon vanilla extract
  • 1 cup mashed bananas

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Whisk together the flour, oats, sugar, baking powder, soda,salt, skor bits, hemp and flax.
  3. In a large bowl, beat the egg lightly. 
  4. Stir in the milk, oil (or melted butter), and vanilla. 
  5. Add the mashed banana, and combine thoroughly.
  6. Stir the flour mixture into the banana mixture until just combined, don't over-mix! 
  7. Line a 12-cup muffin tin with paper baking cups, and divide the batter evenly among them. The batter will be up to the top but you are going to get lovely over-the-edge crispy "muffin tops" with this recipe!
  8. Bake at 400 degrees Fahrenheit for 18 to 20 minutes.
