Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup palm sugar or brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup skor bits
- 3 tablespoons hemp hearts
- 1 tablespoon flax
- 1 egg
- 3/4 cup milk
- 1/3 cup vegetable oil or melted butter
- 1/2 teaspoon vanilla extract
- 1 cup mashed bananas
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Whisk together the flour, oats, sugar, baking powder, soda,salt, skor bits, hemp and flax.
- In a large bowl, beat the egg lightly.
- Stir in the milk, oil (or melted butter), and vanilla.
- Add the mashed banana, and combine thoroughly.
- Stir the flour mixture into the banana mixture until just combined, don't over-mix!
- Line a 12-cup muffin tin with paper baking cups, and divide the batter evenly among them. The batter will be up to the top but you are going to get lovely over-the-edge crispy "muffin tops" with this recipe!
- Bake at 400 degrees Fahrenheit for 18 to 20 minutes.
